This Indian rice dish with oranges, pistachios and lamb is "delicious yet simple," says Darjeeling Express' owner Asma Khan.
Called narangi pulao, she says this "aromatic" recipe is the "perfect Indian dinner," with "juicy pieces of orange, crunchy pistachios and whole spices adding fragrance to the grains."
Other refreshing dishes for spring you can make include cabbage wraps, lamb patties, lemon risotto, lamb salad and honey chicken.

Ingredients
- 10 2/3 oz of basmati rice
- 3 tbsp of ghee, or unsalted butter
- 2 cardamom pods
- 1 cinnamon stick
- 2 cloves
- 1 Indian bay leaf
- 1 small onion, finely chopped
- 1 tsp salt
- 2 large oranges
- 3 tbsp of pistachio nuts, shelled
- serve with rich lamb kofta curry (optional)
