Skate wing with black butter
Hot, flavoured butter poured over sweet skate makes an easy yet impressive midweek fish supper. Serves 1.
INGREDIENTS
1 skate wing
Vegetable oil, for frying
100g salted butter
Handful of capers
Handful of flat-leaf parsley, chopped
3-4 tablespoons red wine vinegar
Lemon wedges, to serve
METHOD
1) Lightly salt the skate wing. Heat a little vegetable oil in a frying pan and cook the skate for 2-3 minutes on each side.
The flesh will become firmer and turn golden as it cooks.
2) Meanwhile, melt the butter in a pan and cook until it turns nut-brown.
3) Remove from the heat and quickly stir in the capers, parsley and vinegar.
4) Pour the black butter over the fish and serve.
