Avocado and crab shots
AVOCADO and crab shots taste as good as they look and are perfect for the festive season.
INGREDIENTS
Serves 6 mini portions or 4 starters
300g (10½oz) white crab meat
Salt and pepper, to taste
5cm (2in) cucumber, finely diced into little cubes
2 tbsps mayonnaise
2 tbsps baby cress
1 ripe avocado
1 tbsp lemon juice
METHOD
Avocado and crab shots make a posh party snack
• Add the crab to a bowl, checking there are no bits of shell left. Add the salt, pepper, cucumber, mayonnaise and ½ the cress then mix well.
• Halve the avocado, remove the stone and scoop out the flesh into another bowl. Squeeze the lemon over the avocado, add a pinch each of salt and pepper then mash the avocado in the lemon juice to stop any discolouration.
• Line the bottom of your glasses with avocado using a small spoon to press it neatly into place. Add a layer of crab, top with a sprig of cress and serve.
