Prawn fried rice
PRAWNS are a good source of protein and minerals and are very low in fat and calories which makes them a healthy choice. Serves 4.
INGREDIENTS
2 tablespoons of sunflower oil
2 small carrots, finely diced
75g Green Grocers frozen peas
200g La Caldera frozen prawns, defrosted
400g Golden Sun long grain rice, cooked
2 eggs, beaten
1 tablespoon Blue Dragon soy sauce
4 spring onions, sliced
METHOD
1) Heat the oil in a wok or large frying pan and fry the carrot for 3-4 minutes until just golden and tender.
2) Add the peas and prawns and fry for just a minute then add the rice and stir fry until hot.
3) Make a well in the centre of the rice and add the eggs and stir over the heat until just scrambled.

4) Stir in the soy sauce and spring onions and serve hot.
