Cheese fondue
A TRADITIONAL French and Swiss dish, the cheese fondue has become popular all over the world.
Try this recipe for a fun and sociable dinner with friends. Serves 4.
INGREDIENTS
1 garlic clove
300ml green veltliner wine
300g Appenzeller cheese
300g grated Emmental
3-4 tablespoons corn fl our
3 tablespoons fruit schnapps
Pepper
Nutmeg
1 baguette
1/2 a rustic bread (250g)
METHOD
1) Cut the garlic clove in half and use to rub the fondue pot. Bring the wine to the boil in the pot.

2) Grate the Appenzeller and add it, together with the Emmental to the wine; let the cheese melt over a medium heat.
3) Mix the corn fl our with the fruit schnapps to a smooth paste and lightly bind the fondue with the mixture. Season to taste with pepper and nutmeg.
4) Cut the baguette and the rustic bread into 2x2cm cubes.
5) Place the fondue pot on a warmer or réchaud. Stir occasionally to make sure that the fondue remains creamy.
6) Serve with bread cubes and a mixed green salad.
