METHOD
Garlic grilled New York-style strip steak
1) Place your steaks on a cutting board. Pound them with a meat mallet if you like them really tender or thin. Use your hands to rub both sides of the steak with garlic.
2) Pour olive oil into a bag suitable for putting in the fridge. Place the steaks in the bag, along with any stray pieces of garlic. Close the bag tightly and work the garlic and oil into the steak from the outside.
3) Place the bag containing steaks and olive oil-garlic marinade in the fridge for at least 4 hours.
4) Remove the steaks, and pick off any garlic pieces that have stuck so they won’t burn when grilling takes place. Season with salt and pepper.
5) Let the steaks come to room temperature then place on a heated grill. Cook the steaks to your preference, using tongs to turn them halfway through cooking. When the steaks are done, remove from grill and place on a serving platter.
6) Let the steaks rest for about 5 minutes to distribute the juices. Serve with chips or mashed potatoes and steamed vegetables on the side, if desired.
