Mary Berry’s ‘very easy’ banana and chocolate chip muffins only take 5 minutes to prepare

Banana bread is one way to use up overripe bananas, but Mary Berry has come up with another recipe idea which is "very easy to make."

Banana bread is a great way to use up any ripe bananas, but it turns out there is an even tastier recipe that is just as easy to make.

Mary Berry’s banana and chocolate chip muffins are perfect to bake at the weekend as they only take five minutes to prepare before they cook in the oven for around 25 minutes.

In her cookbook Fast Cakes, Mary wrote: “Banana and chocolate is a great combination and these American-style muffins go down really well with children. They are also very easy to make.”

It can sometimes feel overwhelming to bake a cake from scratch if there is a long list of ingredients, but this recipe uses only simple ingredients you likely already have in your kitchen

This is the best way to use up any leftover ingredients or treat yourself to something homebaked and delicious without having to spend hours baking as these muffins can be ready in only 30 minutes total.

How to make banana and chocolate chip muffins

Ingredients (makes 12) 

  • Two ripe bananas mashed with a fork (around 200g worth)
  • 250g of self-raising flour
  • 175g of light muscovado sugar
  • One pot of natural yoghurt (around 150g worth)
  • 100g of cold butter straight from the fridge
  • 100g of dark chocolate chips
  • Two large eggs
  • Two tablespoons of milk
  • One teaspoon of baking powder

Kitchen equipment needed: 

  • 12 muffin cases
  • Muffin tin
  • Large mixing bowl

Instructions

To begin, preheat the oven to 180C (Fan 160C or Gas Mark 4). Place the 12 muffin cases in the muffin tin.

Add all the ingredients except the chocolate chips into a large mixing bowl and stir the ingredients together, either with a wooden spoon or electric mixer, until fully blended.

Once you have a smooth mixture, stir in the chocolate chips. Spoon the mixture equally into the muffin cases and place in the oven.

Bake in the oven for around 25 to 30 minutes until the muffins are well-risen and lightly golden brown.

When ready, take out the oven and take out the muffin tin to cool. Once cool completely, your tasty banana and chocolate chip muffins are ready to serve.
