Instructions
First of all peel and chop the garlic lengthways. Then place the garlic into a large non-stick frying pan on high heat with a tablespoon of olive oil.
Next, cut the chicken breast into three strips before tossing it with a pinch of salt and black pepper.
Get the garlic a golden colour before removing it from the pan and leaving the oil behind. Add the chicken to the pan and let it cook for five minutes until that is golden and cooked through too. Turn the chicken every now and then to ensure it is cooked throughout.
Remove the chicken from the pan and add the jarred chickpeas. Don't drain the juices from the chickpeas, this can be added too.
Next, add the spinach, along with most of the garlic and a tablespoon of red wine vinegar. Toss this until the spinach has wilted and the chickpeas have warmed through.
Add some seasoning of salt and pepper before adding the chicken back to the pan. Finish the dish with the rest of the garlic and a dusting of sumac.
